Such a fun and easy way to make cookies. Super easy and nutritious. I made mine low sugar and gluten free but you can change it up to your liking.

Ingredients

  • 1 c gluten free oats
  • 1 Tbsp unsweetened coconut shavings
  • 2 large ripe bananas
  • 1 small handful organic raisins
  • 1 tsp ground flaxseed
  • 1/2 tsp ground cinnamon

Instructions

Preheat oven to 350 degrees F. Mash bananas in a bowl with a fork. Mix in remaining ingredients. Place about 1 Tbsp mix on silicone baking mat on a cookie sheet and bake 15 minutes.

Optional: These cookies are so easy, you can add or subtract or substitute ingredients to your liking. Some suggestions would be adding dried berries like cranberries, blueberries or goji berries instead of raisins, removing flaxseed meal, using a different spice in place or addition to the cinnamon like pumpkin pie spice or nutmeg, and so much more. Just note, the more you add to it, you may need to add an additional 1/2-1 banana so the cookies dont fall apart and crumble.
